The number on the docket.
Açaí purée is graded by pulp solids — the share of actual fruit in the purée versus water. Brazilian producers name the grades Popular (8%), Medium (11%) and Especial (14%), the top of the scale. Most of Australia serves the lower two. Especial costs more and is harder to source — and it's been our standard from the start: deeper colour, fuller flavour, bowls that hold their toppings.
