Frozen mango instead of fresh — when and why.

Fresh and frozen mango aren't rivals. They're tools for different jobs. Here's how to decide which one to reach for.

01Choose frozen when it's blended

For smoothies, smoothie bowls, sorbets, lassis, frozen cocktails and nice cream, frozen mango is the better choice. It adds chill and thickness without ice, so the drink or bowl stays full-flavoured instead of watery. Fresh mango in a smoothie needs ice, and ice dilutes.

02Choose frozen when it's cooked

In muffins, cakes, crumbles, sauces, chutneys and curries, the texture difference between fresh and frozen disappears once it's cooked. Frozen mango is consistent, already cut, and often cheaper per usable kilo outside the season.

03Choose frozen out of season

Australian mango season runs from late winter in the Top End to around March or April in Queensland. Outside that window, fresh mango can be expensive or disappointing. Frozen mango, picked ripe and frozen fast, is reliably sweet whatever the month.

04Choose frozen to cut waste

A fresh mango is a fair amount of skin and seed, and fruit that over-ripens before it's used gets thrown out. Frozen mango is 100% usable, keeps for months in the freezer, and lets you take out only what you need. For businesses, it also makes cost per serve easy to calculate.

05Choose fresh when texture is the point

Freezing softens fruit. Ice crystals break down cell walls, so thawed mango is softer and juicier than fresh. Where you want firm, glossy slices that hold their shape, fresh still wins: mango cheeks to eat, slices on a pavlova, fresh fruit platters, or a salad where crunch matters. In season, a perfectly ripe fresh Kensington Pride, Australia's most widely grown variety, is hard to beat.
