How do you freeze bananas.

Freezing bananas is simple. Freezing them so they're easy to use later takes one extra step. Here's the method that works.

01Pick the right bananas

Freeze bananas when they're ripe to very ripe, yellow with brown speckles. That's when they're at their sweetest and most aromatic, and freezing holds them at that point. Green-tipped bananas freeze fine but taste starchy and bland once thawed.

02Always peel first

Frozen banana skin turns black and is very hard to remove. Peel before freezing, every time.

03Slice, halve or leave whole

Slices or chunks (2–3cm) are best for smoothies, bowls and "nice cream", and they're easy on your blender. Halves suit baking, since you'll mash them anyway. Whole peeled bananas are the quickest option, but they take longer to thaw and are harder to blend.

04Tray-freeze, then bag

Lay the pieces in a single layer on a tray lined with baking paper, not touching. Freeze for 1–2 hours until firm, then transfer to a zip-lock bag or airtight container, pressing out as much air as you can. This is how commercial IQF (individually quick frozen) fruit stays free-flowing, and it means you can take out exactly what you need instead of chiselling a frozen block.

05Label and use within a few months

Write the date on the bag. At a steady -18°C, home-frozen bananas stay safe for a long time, but their flavour and texture are best within about two to three months. After that they can pick up freezer odours or develop freezer burn (dry, discoloured patches).

06What about browning?

Some darkening is natural once bananas are cut and exposed to air, and it doesn't affect safety. To limit it, work quickly, keep air out of the bag, and if you like, toss the slices in a little lemon juice before freezing. It won't matter at all for smoothies or baking.

07Using them from frozen

Add frozen chunks straight to the blender for smoothies and bowls. For baking, thaw in a bowl and include the liquid that collects (see are frozen bananas good for baking?).

For cafés and manufacturers, freezing in-house rarely makes sense at volume. Ready-frozen IQF banana saves the labour and the waste.
