What can you make using frozen mango.
A bag of frozen mango is a shortcut to some of summer's best flavours, all year round. Here are five easy ways to use it.
01Two-minute mango sorbet
Blend 500g frozen mango, 2 tablespoons lime juice and 2–3 tablespoons honey or sugar syrup in a food processor until completely smooth. Scrape down the sides as you go. Serve immediately as a soft sorbet, or freeze for an hour to firm up. No ice-cream machine needed.
02Mango lassi
Blend 1 cup frozen mango, 1 cup plain yoghurt, ½ cup milk and a little honey to taste. Add a pinch of ground cardamom for a traditional touch. Frozen mango makes it thick and cold without diluting it with ice.
03Tropical smoothie bowl
Blend 1 cup frozen mango, ½ frozen banana and 100g frozen pink pitaya (or açaí) with just 2–4 tablespoons of coconut water, until thick. Top with coconut flakes, passionfruit pulp and granola.
04Mango salsa
Thaw 1 cup frozen mango and drain it, then dice it small. Mix with ¼ finely diced red onion, a chopped chilli, a handful of chopped coriander, the juice of a lime and a pinch of salt. Thawed mango is softer than fresh, so fold it in gently and serve soon. It's great with fish tacos, grilled chicken or prawns.
05Mango coconut chia pudding
Stir 3 tablespoons chia seeds into ¾ cup coconut milk with a teaspoon of maple syrup and leave it in the fridge for at least 2 hours, or overnight. Blend 1 cup frozen mango (slightly thawed) into a thick purée and layer it over the pudding.
06Tips for cooking with frozen mango
Blending: use it straight from frozen for the thickest results. Salsas and salads: thaw in the fridge and drain first. Baking: add it to muffins and cakes from frozen, tossed in a little flour so it doesn't sink. Sauces: simmer from frozen with a little sugar and lime for a quick dessert sauce.
